“TORISHIKI ICHIMON” operated by LDH kitchen Inc. (Meguro Ward, Tokyo) will participate in the event “Work Experience for High School Students ‘Oshigoto Fair'” which will be held in Tokyo on June 21, 2024. It will create an opportunity for high school students to think about their own careers from the unique perspective of Japan’s representative restaurant of skewered grilled chicken, as a part of career education for high school students before the announcement of job openings for high school graduates on July 1.

“TORISHIKI”, which became Michelin 1 Star Restaurant in 2011 and thereby became Japan’s representative restaurant for skewered grilled chicken, formed “TORISHIKI ICHIMON” in order to develop the culture of skewered grilled chicken further. Since its formation, it has opened 9 branches in Tokyo; “TORIEN New York City” in New York, the only Michelin 1 Star Restaurant of skewered grilled chicken in the United States; and “TORIKAZE Shanghai” in Shanghai, China, the first branch in Asia. It has been actively developing overseas business.

“TORISHIKI ICHIMON” has been focusing on efforts to pass Japanese culture of skewered grilled chicken on to the next generation, including the employment of inexperienced employees and people who want a second career. On the other hand, for high school students and young adults, yakitori has a strong image of being just a “side dish”, especially for high school students who rarely visit physical shops because “working at a yakitori restaurant” is almost not an option for their careers. At this event, young staff members working at “TORISHIKI ICHIMON” will talk about the fun and values of working at “TORISHIKI ICHIMON” based on their own experience, and aim to deepen the understanding of working at a restaurant of skewered grilled chicken through a Q&A session with the high school students who will attend the event.

Yoshiteru Ikegawa, the representative of TORISHIKI, proposed to “improve the status of artisans of skewered grilled chicken” in Japan. For this purpose, “TORISHIKI ICHIMON” has been working to strengthen its welfare system, including providing a dormitory system mainly for those who move to Tokyo. Ikegawa himself told the young generation, “Skewered grilled chicken will not develop as part of Japanese food culture unless we preserve its traditional methods and develop them. I want to nurture ‘artisans who inherit traditions’ and work together with them.” He also said, “I hope that artisans who inherit traditions of skewered grilled chicken, including myself, and young artisans who have trained their skills will constantly spread the ‘real charm of skewered grilled chicken’ to overseas countries. And I hope that people around the world will be surprised and moved by the fact that Japan has such a sensational food culture.”

“TORISHIKI ICHIMON” will continue its efforts to pass “Japanese culture of skewered grilled chicken” on to the young generation, including hiring high school graduates. Future plans will be posted on the official homepage and the official social media.

【Work Experience Session for High School Students “Oshigoto Fair”】
This is a work experience event held by “JINJIB” (headquartered in Osaka City, Osaka Prefecture), a company that supports high school students in employment, to prepare high school students for job hunting activities and to provide career education for them. Local companies and high school students gather at one venue. Students are given an opportunity to deepen their understanding of the charm of companies and jobs through work experience and communication with working adults, to learn about their interests, and to think about their careers.
