NEWSFrom “OMAKASE” to “OKONOMI,” “Torisora” renewal opening on April 15, 2026 (Wed.) ── Shifting from a “being chosen” yakitori specialty restaurant to a “choosing” one ──

RELEASE

2026.04.08

LDH kitchen Inc. promotes Japanese food culture both in Japan and overseas under the concept of “Food is also entertainment” (Head office: Meguro-ku, Tokyo; CEO: Hiroyuki Suzuki; hereinafter referred to as “our company”).
Meguro’s “TORISHIKI,” a Michelin one-star restaurant known as one of “Japan’s most difficult restaurants to book” and a partner in our efforts to enhance the value of Japanese food culture, is led by owner Yoshiteru Ikegawa, who also heads “TORISHIKI ICHIMON.” From this restaurant, the yakitori brand “Torisora” was created and will reopen on April 15, 2026 (Wed.).

With this renewal, the concept transitions from “OMAKASE” to “OKONOMI.”
From yakitori that is “chosen by others” to “chosen for yourself,” the restaurant is returning to the “yatai” style, the origin of yakitori culture, upgrading to an à la carte yakitori specialty restaurant where you can freely enjoy “exactly what you want, when you want.”

While preserving the approach and techniques cultivated over the years for each and every skewer, the experience has evolved into one where “your own skewer” can be chosen based on your mood and pace, and enjoy it to your heart’s content.

■ NAME STORY|The commitment behind the single character “鳥 (translation: bird)” in the renewed business nametorisoraLOGO
Alongside this renewal, the name of this restaurant has been changed from “とりそら (Torisora)” to “鳥そら (Torisora).” The single character “鳥 (translation: bird)” embodies our respect for the ingredients, as well our chefs’ determination to sincerely approach each skewer of yakitori and continuously hone their skills.
By reexamining not only the cuisine but also the name itself through a return to origins and essence, “Torisora” takes a new step forward as a restaurant prepared to carry the future of yakitori culture.

■ CONCEPT & MENU|The joy of “choosing” by returning to our roots
Returning to the origins of yakitori where the culture was inherited from the “yatai” culture, we have shifted to an à la carte centered “OKONOMI” style where you can freely enjoy the dishes of your choice in your preferred quantities.
The artisans’ skill in carefully grilling hand-selected ingredients one by one remains the same. Building on the certain techniques cultivated by TORISHIKI ICHIMON, we have prepared a variety of yakitori and individual dishes that you can choose as you like.
“Your own skewer” can be chosen based on your mood and pace that day, and enjoy it to your heart’s content.

In addition, through collaboration with Japan’s leading sushi establishment Sushi Saito, LDH kitchen operates two restaurants—“Sushi Tsubomi” and “Sushi Saito Hanare NANZUKA”—broadening the reach and appeal of Japanese culinary culture.

In addition, “AMAZING COFFEE,” produced by EXILE TETSUYA, continues its nationwide expansion. Most recently, on March 20, “Hokkaido Yakiniku Yagien,” a new yakiniku concept supervised by EXILE SHOKICHI, held its grand opening.

——A once-in-a-lifetime skewer.
With this faith in mind, the chefs spend their entire life facing chicken, charcoal and themselves.
This is a brand where like-minded artisans gather together to preserve and cultivate the traditions of Japanese culinary culture and weave them into the future, all while passing on their skills and spirit.
Currently, the brand has 14 stores in Japan and abroad, with plans for further expansion.
